Loaded Fusion Asian Nachos (The Savoury Party Favourite)

If you've ever wanted to take nachos to a place they've never been before, this is the recipe that does it. Forget corn tortilla chips — a mountain of Yunion wonton chips forms the crispy, golden base for a loaded Asian fusion appetiser that is so bold, so vibrant, and so completely over the top in the best possible way that it becomes the centrepiece of every table it lands on. Sweet soy pork, sriracha mayo, sticky hoisin, fresh mango, coriander, and toasted sesame seeds piled high over chips that shatter with every bite. This is the kind of dish that gets photographed before it gets eaten, and then demolished within minutes after. Here at Yunion, we think our wonton chips were born for exactly this moment.

Ingredients
For the wonton chip base:
1 packet Yunion Wonton Chips
For the sweet soy pork topping:
400g ground pork or chicken mince
3 cloves garlic, finely minced
1 tsp fresh ginger, finely grated
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp hoisin sauce
1 tbsp kecap manis
1 tsp sesame oil
1 tsp sugar
Neutral oil for frying
For the sriracha mayo:
4 tbsp Japanese mayonnaise
2 tbsp sriracha sauce
1 tsp lime juice
For the toppings:
3 tbsp hoisin sauce, warmed slightly for easy drizzling
1 ripe mango, finely diced
4 spring onions, finely sliced
Large handful fresh coriander leaves
2 tbsp toasted black sesame seeds
1 long red chilli, finely sliced
Lime wedges to serve
Method
Make the sriracha mayo first. Combine Japanese mayonnaise, sriracha, and lime juice in a small bowl and whisk until smooth. Transfer to a squeeze bottle or small zip-lock bag with the corner snipped off for easy drizzling. Set aside.
Cook the sweet soy pork. Heat a splash of neutral oil in a wok or frying pan over high heat. Add garlic and ginger and fry for 30 seconds until fragrant. Add pork or chicken mince and cook, breaking up with a spoon, until browned and cooked through — about 5 to 6 minutes.
Add light soy sauce, dark soy sauce, hoisin sauce, kecap manis, sugar, and sesame oil to the mince. Stir to combine and cook for a further 2 minutes until the sauce is absorbed and the meat is glossy, caramelised, and deeply savoury. Remove from heat and set aside.
Arrange the Yunion wonton chips in a generous, overlapping layer across a large serving platter or board. Don't stack them too deep — you want every chip to have access to the toppings above it.
Spoon the warm sweet soy pork evenly over the chips while it's still hot.
Drizzle sriracha mayo generously back and forth across the entire surface in a zigzag pattern.
Follow with a drizzle of warmed hoisin sauce in the same zigzag fashion.
Scatter diced mango, spring onions, fresh coriander, toasted black sesame seeds, and sliced red chilli over the top.
Finish with a squeeze of fresh lime juice across the whole platter and serve immediately with extra lime wedges on the side.

Tips
Speed is everything once you start assembling. Wonton chips begin to soften the moment warm, saucy toppings land on them, so have every element prepared and ready to go before the chips hit the platter. From first topping to table should take no more than two minutes.
Diced fresh mango is what elevates this dish from a great party snack to something genuinely memorable. The sweet, juicy burst of mango against the savoury pork and spicy sriracha mayo is a combination that stops people mid-conversation. Don't be tempted to leave it out.
This recipe is incredibly versatile for different dietary needs. Swap the pork for teriyaki beef, shredded chicken, or a vegetarian mushroom and tofu mixture and the result is equally delicious. The wonton chip base and the toppings formula work with almost any protein you have on hand.
