Vegetarian Gon Lo Wonton Mien

Just because a dish is vegetarian doesn't mean it has to compromise on the depth, richness, and glossy satisfaction of the original. This plant-based take on the beloved Gon Lo Wonton Mien delivers every bit of the savoury, fragrant, deeply umami experience that makes the classic version so popular, using a clever combination of vegetarian pantry staples that punch well above their weight. Silky tofu wontons, springy egg noodles coated in a gorgeous garlic shallot oil, and a sauce built on mushroom oyster sauce and dark soy. Ingredients


For the noodles:

  • 1 packet Yunion Wonton Egg Noodles


For the vegetarian wontons:

  • 150g firm tofu, pressed and finely crumbled

  • 100g shiitake mushrooms, finely diced

  • 1 tbsp light soy sauce

  • 1 tsp sesame oil

  • 1 clove garlic, minced

  • 1 tsp fresh ginger, grated

  • 2 spring onions, finely chopped

  • Pinch of white pepper

  • 1 packet Yunion wonton skins


For the homemade garlic shallot oil:

  • 3 shallots, thinly sliced

  • 4 cloves garlic, thinly sliced

  • 80ml neutral oil


For the tossing sauce:

  • 2 tbsp vegetarian mushroom oyster sauce

  • 1 tbsp dark soy sauce

  • 1 tbsp light soy sauce

  • 1 tsp sesame oil

  • 1 tsp sugar

  • Pinch of white pepper


For the toppings:

  • 1 cup bean sprouts, blanched briefly

  • 1 cup choi sum or bok choy, blanched

  • Extra crispy shallots and garlic from the oil

  • Fresh spring onions, finely sliced

  • Toasted sesame seeds


Method


  • Make the garlic shallot oil first as it takes the longest. Place sliced shallots and garlic in a cold wok with the neutral oil. Turn heat to medium low and fry gently, stirring occasionally, until both are deeply golden and crispy. This takes around 10 to 12 minutes. Strain and reserve the fragrant oil and the crispy shallots and garlic separately.

  • Make the wonton filling. Combine crumbled tofu, diced shiitake mushrooms, soy sauce, sesame oil, garlic, ginger, spring onions, and white pepper in a bowl. Mix well until the filling holds together. Taste and adjust seasoning.

  • Place a teaspoon of filling in the centre of each wonton skin. Moisten edges with water and fold using your preferred method. Set aside on a lightly floured tray.

  • Combine all tossing sauce ingredients in a small bowl and stir until sugar is fully dissolved. Set aside.

  • Cook wontons in a pot of gently simmering water for 4 to 5 minutes until cooked through. Remove with a slotted spoon and set aside.

  • Cook Yunion Wonton Egg Noodles in a large pot of boiling water for 1 to 2 minutes until just cooked with a firm, springy bite. Drain thoroughly and shake off all excess water.

  • Transfer hot noodles immediately to a bowl and pour the tossing sauce over the top. Add a generous spoonful of the garlic shallot oil and toss vigorously until every strand is evenly coated and glossy.

  • Top with wontons, blanched choi sum, bean sprouts, crispy shallots and garlic, fresh spring onions, and a scatter of toasted sesame seeds.



Tips


  • Pressing the tofu thoroughly before using it in the wonton filling is essential. Excess moisture in the filling makes the wonton skins soggy and prone to bursting during cooking. Wrap the tofu in a clean tea towel and press firmly for at least 5 minutes before crumbling.

  • Starting the shallots and garlic in cold oil rather than hot oil is the key to even, golden crispiness. Cold oil allows them to fry slowly and evenly all the way through rather than burning on the outside while remaining raw in the centre.

  • This dish is a brilliant example of how vegetarian cooking can be every bit as rich, complex, and deeply satisfying as any meat based dish. The combination of mushroom oyster sauce, dark soy, and homemade garlic shallot oil creates a depth of flavour that genuinely rivals the original.
