Suzhou-Style Soy Sauce Broth Noodle (Hong Tang Mian)

In the ancient canal city of Suzhou, noodle eating is taken very seriously indeed. So seriously, in fact, that the presentation of a bowl of Hong Tang Mian is governed by specific traditions that have been followed for centuries. The noodles are precisely combed and folded into a neat, tight wave pattern inside the bowl. The rich, dark red soy broth is ladled carefully so the noodles sit half submerged like a small island in a glossy amber sea. And the garnish is nothing more than a perfect sprinkle of fine scallion rings. No clutter, no excess, nothing superfluous. Just a bowl of extraordinary beauty and deeply comforting flavour. Ingredients
For the noodles:
1 packet Yunion Yang Chun Noodles
For the red soup broth (Hong Tang):
600ml good quality chicken stock or pork bone broth
3 tbsp high quality dark soy sauce
1 tbsp light soy sauce
1 tbsp rock sugar, crushed, or regular white sugar
1 tbsp Shaoxing wine
1 star anise
1 small cinnamon stick
2 slices fresh ginger
1 tsp sesame oil to finish
For the bowl base:
1 tsp light soy sauce per bowl
Pinch of white pepper per bowl
To garnish:
3 spring onions, sliced into the finest possible rings
Pinch of white pepper
Method
Combine chicken stock, dark soy sauce, light soy sauce, rock sugar, Shaoxing wine, star anise, cinnamon stick, and ginger slices in a medium saucepan. Bring to a gentle boil over medium heat, stirring to dissolve the sugar completely.
Reduce heat to a low simmer and cook for 15 minutes to allow the spices to infuse and the broth to develop its characteristic deep, rich colour and balanced sweetness. Taste and adjust seasoning — the broth should be deeply savoury with a distinct, balanced sweetness and a warm spice undertone.
Remove star anise, cinnamon, and ginger from the broth. Stir in sesame oil. Keep hot over the lowest possible heat while you cook the noodles.
Prepare each serving bowl with a small amount of light soy sauce and a pinch of white pepper.
Cook Yunion Yang Chun Noodles in a large pot of boiling water for 1 to 2 minutes until just cooked through with a firm, delicate bite. Drain thoroughly.
This is where the Suzhou tradition comes in. Rather than simply dropping the noodles into the bowl, use a pair of chopsticks or a fork to carefully lift and fold the noodles into a neat, compact wave pattern in the centre of each bowl. Take a moment to do this properly — in Suzhou, the presentation of the noodle is considered as important as the flavour of the broth.
Ladle the hot red broth carefully around and partially over the noodles so they sit half submerged in the glossy, dark amber soup.
Finish with a precise sprinkle of the finest possible spring onion rings and a whisper of white pepper. Nothing else.
Serve immediately.

Tips
Rock sugar is the traditional sweetener for Hong Tang Mian and is worth using if you can find it. It dissolves into the broth more smoothly than regular sugar and adds a subtle, rounded sweetness that white sugar doesn't quite replicate. It's widely available at Asian grocery stores across Perth.
The folding and presentation of the noodles is not just decorative. In Suzhou noodle culture, a carefully presented bowl is a sign of respect for the diner and pride in the craft. Taking 30 extra seconds to fold the noodles neatly transforms the eating experience in a way that's hard to explain until you've tried it.
High quality dark soy sauce is the backbone of this broth and makes an enormous difference to the final result. Look for a premium dark soy sauce at your local Asian grocery store rather than reaching for the supermarket standard. The depth, complexity, and natural sweetness of a good dark soy is what gives Hong Tang Mian its signature character.
