KL Hokkien Mee (Kuala Lumpur Style)

If you've ever sat down at a Malaysian hawker stall and ordered KL Hokkien Mee, you already know what all the fuss is about. Dark, deeply caramelised, and smoky with the kind of rich seafood umami that lingers long after the last bite — this is street food at its absolute finest. Here at Yunion, we think our fresh Hokkien noodles are the perfect foundation for bringing this legendary Malaysian classic straight to your Perth kitchen.

Ingredients


For the stir-fry:

  • 1 packet Yunion Hokkien Noodles

  • 150g pork belly, thinly sliced

  • 150g prawns, peeled and deveined

  • 100g squid, cleaned and sliced into rings

  • 2 fish cakes, sliced

  • 2 cups napa cabbage, roughly chopped

  • 3 cloves garlic, minced

  • 2 tbsp crispy pork lard (chee yau char) — optional but highly recommended

  • Lard oil or neutral oil for frying

For the sauce:

  • 3 tbsp kecap manis (Indonesian sweet soy sauce)

  • 1 tbsp dark soy sauce

  • 2 tbsp oyster sauce

  • 125ml pork or chicken stock


Method


Mix all sauce ingredients together in a small bowl and set aside.

  • Heat wok over the highest heat possible until smoking. Add lard oil or neutral oil.

  • Add garlic and fry for 30 seconds until fragrant and just golden.

  • Add pork belly and stir-fry for 2 minutes until lightly caramelised.

  • Add prawns and squid and toss for 1 minute until just cooked.

  • Add Yunion Hokkien Noodles and pour the sauce over the top. Toss well to coat.

  • Pour in the stock and toss everything together. Let the noodles absorb the liquid for 2-3 minutes, stirring occasionally.

  • Add napa cabbage and fish cakes and toss for a final minute until cabbage is just wilted.

  • Top with crispy pork lard if using and serve immediately.



Tips


Crispy pork lard is what gives authentic KL Hokkien Mee its signature richness. Asian grocery stores across Perth usually carry it — it's worth tracking down.

  • Don't rush the absorption step. Letting the noodles soak up the stock is what creates that gorgeous, intensely flavoured coating.

  • The darker the colour, the deeper the flavour. Don't be shy with the kecap manis. If you don't want it too sweet, another option would be to use Dark Cooking Caramel. You'll find it selling in more Asian stores.
