The Basic Method: Boiling on the Stovetop

Cooking egg noodles on the stovetop is straightforward and gives you the most control over texture.


What You'll Need

  • Large pot (at least 6 quarts for 500g of noodles)

  • Plenty of water

  • Salt

  • Colander for draining


The Process

  • Bring a pot of water to a rolling boil and salt it generously (it should taste like the sea).

  • Add fresh egg noodles and stir gently.

  • Cook 3–5 minutes, checking at 3 minutes, stirring occasionally.

  • Maintain a gentle boil. Noodles should be tender with a slight bite.

  • Drain immediately.

  • For soup, add directly; for stir-fries or cold dishes, rinse under cold water.



Quick Cooking Methods

Microwave Method

  • Place noodles in a tall, microwave-safe bowl.

  • Add enough water to cover the noodles by about 5cm.

  • Microwave on high for 4-5 minutes, checking and stirring halfway through.

This method works well for single servings.


Instant Pot Method

  • Add noodles to the inner pot with 2 cups of water and a pinch of salt.

  • Cook on high pressure for 2 minutes, then do a quick release.

This method is convenient when you're already using your pressure cooker for other components of your meal.

Noodles need room to move around as they cook. Crowded noodles stick together and cook unevenly.


Don't Add Oil to the Cooking Water
