Classic Chinese Chicken and Crunchy Wonton Salad

This is the one recipe that gets requested at every potluck, every summer barbecue, and every office lunch spread by the people who tried it once and simply cannot stop thinking about it. Shredded chicken, grated carrot, edamame beans, and crisp spring onions tossed in a deeply aromatic toasted sesame ginger dressing, finished with a generous crown of Yunion wonton chips that add the kind of satisfying crunch that makes every single bite an event. Ingredients


For the salad:

  • 1 packet Yunion Wonton Chips

  • 400g cooked chicken breast, shredded — rotisserie chicken works perfectly as a quick shortcut

  • 2 large carrots, grated or julienned

  • 1 cup frozen edamame beans, thawed

  • 4 spring onions, thinly sliced on the diagonal

  • 2 cups wombok or green cabbage, finely shredded

  • 1 cup bean sprouts

  • Large handful fresh coriander leaves

  • 2 tbsp toasted sesame seeds


For the toasted sesame ginger dressing:

  • 3 tbsp light soy sauce

  • 2 tbsp rice wine vinegar

  • 1 tbsp honey or brown sugar

  • 1 tbsp toasted sesame oil

  • 2 tbsp neutral oil such as canola or avocado oil

  • 1 tsp fresh ginger, finely grated

  • 1 clove garlic, finely minced


Method


  • Make the dressing first. Combine all dressing ingredients in a small jar with a tight fitting lid. Seal and shake vigorously for 30 seconds until fully emulsified and the honey or sugar is completely dissolved. Taste and adjust — it should be a beautifully balanced mix of salty, sweet, tangy, and nutty with a distinct ginger warmth. Set aside.

  • If using a whole rotisserie chicken, shred the breast meat into thin, even strips using two forks or your fingers. Discard the skin or save it for another use. The chicken should be in long, generous shreds rather than small chunks — longer pieces toss through the salad more elegantly and give a better eating experience.

  • Combine shredded chicken, grated carrot, edamame beans, spring onions, shredded wombok or cabbage, and bean sprouts in a large serving bowl. Toss gently to distribute everything evenly.

  • Pour the toasted sesame ginger dressing over the salad and toss thoroughly until every element is evenly coated. Taste and add a little extra soy sauce or rice vinegar if needed.

  • Scatter fresh coriander leaves and toasted sesame seeds generously over the top.

  • Just like the crispy noodle salad, this final step is critical. Add the Yunion wonton chips at the absolute last second before the salad goes to the table. Arrange them across the top of the salad in a generous, overlapping layer rather than tossing them through — this keeps them crispy and visible, adding that dramatic crunch to every serving.

  • Serve immediately.



Tips


  • Rotisserie chicken is one of the great shortcuts of home cooking and works beautifully in this salad. The flavour is richer and more complex than plain poached chicken, and it saves significant time on a busy weeknight or when you're preparing for a crowd. Pick up a whole bird, shred what you need, and save the rest for another meal.

  • The dressing can be made up to three days ahead and kept in a jar in the fridge. In fact it improves with a little time as the ginger and garlic infuse more deeply into the oil. Shake vigorously before using as the dressing will separate on standing.

  • This salad is brilliant for meal prep. Keep all the components separate in the fridge — dressed salad in one container, wonton chips sealed in their packet — and combine just before eating. The dressed salad base keeps beautifully for two days. The wonton chips stay crispy in their sealed packet until the moment you need them.
